Cumin Chicken With Hummus | Clean Eating | Sarah Kane Photography

If you're looking for a easy quick and healthy meal that tastes delicious then you must try this recipe!  I'm really making an effort to not only learn to cook, but cook healthy which is no easy task!  One thing I've always disliked about cooking was having to buy a whole bunch of exotic spices for one meal and never using them again.  Total waste of money.  I've been experimenting with the spices and creating my own meals so they don't go to waste.  My new favorite spice is cumin. It is delicious in so many things!  Here's one of the many I've concocted that actually turned out to be a winner!

 

Prep time: 10 minutes

cook time: 15 minutes

Ingredients:

2 tbsp olive oil

2 chicken breasts

1 tomato

half of a sweet onion

1/2 cup of chicken or vegetable broth

3 tbsp of cumin

1/4 tsp salt

 

What to do...

Add olive oil to frying pan over medium heat.  Cut chicken and add to frying pan.  Cook until most pink is gone.  Add onions and cook for 3 minutes.  While the chicken and onions are cooking, in a small bowl, whisk cumin and chicken or vegetable broth together.  Add to frying pan. Cover and reduce heat.

Cut the tomato and add to frying pan. Cook for 3-5 minutes (depending on how cooked you like your tomatoes).   Scoop desired amount of hummus onto your plate. If you want a little kick sprinkle some cayenne pepper on top of the hummus then add chicken, onion and tomato mix on top.
